In the highlands of Huehuetenango's La Libertad municipality grows a wild native fruit locals call injerto. When Jesús Aguirre Panamá first claimed this land in 1874 to grow sugarcane, corn, beans, and tobacco, he found those trees scattered through the surrounding forest — and named the farm after them. That old-growth forest still stands today, protected, covering more than a third of the estate. Coffee arrived around 1900, almost an afterthought to the farm's original crops. It would eventually become everything.

At 1,500–1,920 metres, El Injerto sits at elevations that would punish most coffee farms with frost. What protects it is a geographic accident: warm, dry winds rising from Oaxaca's Plains of Tehuantepec travel up through the Sierra de los Cuchumatanes and hold temperatures in a viable range year-round.

Shade canopy from Inga, Grevillea robusta, and Macadamia integrifolia trees. The most delicate and rare varieties are planted at the highest parcels, where altitude and cooler temperatures slow cherry development and concentrate flavor.

Cherries are hand-harvested at peak ripeness, then floated in water tanks to remove anything underripe or defective.

Fermentation發酵
Washed lots are pulped daily and fermented in glazed-tile tanks with careful attention to timing and water temperature, then soaked in clean spring water.
水洗批次每日去果皮,於釉面磁磚槽中發酵,全程精確掌控時間與水溫,再以乾淨山泉水浸泡。
On-site milling場內處理
Natural lots are dried whole. Wet mill, dry mill, and even a roastery and small chain of coffee shops all sit on the farm's own ground.
日曬批次以整顆咖啡果乾燥。濕處理廠、乾燥處理廠,甚至烘豆廠與家族經營的咖啡館,皆設於莊園自有土地之上。
Guatemala's first Carbon Neutral certified farm 瓜地馬拉第一座碳中和認證農場
In 2017, El Injerto became the first farm in Guatemala to achieve Carbon Neutral certification. A hydroelectric system generates surplus power sold back to the local grid, supplemented by solar panels installed in 2019. Coffee pulp and parchment are composted or reused as fuel, and water is filtered and recycled on-site.
